    "In each of two flute glasses, combine 1 teaspoon of sugar, 3 dashes of bitters, and 1 ounce of sherry. Using a long-handled spoon, stir until the sugar has dissolved (see Cook's Note). Add 4 ounces of sparkling wine to each glass. Gently stir to combine. Garnish with a cookie and serve at once."
