"In a small saucepan, stir together the sugar and matcha powder until well combined, breaking up any clumps. Whisk in the water and bring to a boil over medium-high heat. Remove from the heat and carefully stir until the sugar has dissolved. Let cool completely before using. Store any remaining matcha syrup in an airtight jar in the refrigerator for up to 1 week."

"Fill a cocktail shaker with the lemon juice and mint leaves. Use a muddler to gently bruise and release the mint's fragrance. Add the gin, elderflower liqueur, and ½ ounce of matcha syrup. Fill halfway with ice, cover, and shake to chill, about 30 seconds. Fill two champagne flutes with crushed ice. Strain and divide the mixture evenly between the two glasses and top with sparkling wine. Garnish each glass with a mint sprig and serve at once."
