"In a small saucepan, combine the water and sugar. Bring to a boil over medium-high heat. Add the habanero and lime zest, turn down the heat to low, and simmer for 5 minutes. Remove from the heat and cool for 10 minutes. Strain the mixture into a fine-mesh strainer over a cup with a spout to remove the solids and set aside. Store any remaining habanero syrup in an airtight jar in the refrigerator for up to 1 week."
